How to make Texas Roadhouse Herb Crusted Chicken

This dish is cooked with an assortment of seasonings and herb finishes. While there are a lot used in the recipe, there’s also a tremendous amount of space for you to substitute or add your own based on your preference.

The key to this dish is finishing it off in the oven to really cement all the herbs and spices to give it that perfect outer crust.

Ingredients:

  • 4 plain chicken breasts
  • 1/4 teaspoon of paprika
  • 1/2 teaspoon of garlic powder
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of salt
  • 1/2 a cup of all-purpose flour
  • 1/4 cup of freshly chopped parsley
  • 1/4 cup of freshly chopped thyme
  • 3 tablespoons of olive oil
  • 1/4 cup of freshly chopped rosemary
  • 1/4 cup of freshly chopped sage

Instructions:

We have to cook this recipe in two stages, the first is the base seasoning and flouring that will develop that wonderful crusty outer layer.

After that, we will add the herbs and spices and bake them in the oven to blend everything together.

The key here is to cook fairly hot and fast to keep the chicken as moist and tender as possible.

Step 1:

Preheat the oven to 425°F.

Step 2:

While the oven is heating we can prepare the chicken.

Cut them to the desired size, or alternatively just leave them whole, as we will be finishing them off in the oven and they will be fully cooked through by the end.

Step 3:

In a bowl combine the flour, garlic powder, paprika, pepper, salt and mix them so all the seasonings are evenly distributed.

Step 4:

Coat the chicken in the flour and seasoning mixture, ensure it’s completely covered, then set aside on a plate.

Step 5:

Using a large skillet heat the olive oil on medium-high heat.

Step 6:

Once up to temperature, fry the chicken/flour combination for 3 minutes per side, the color should be a nice golden brown.

Step 7:

Once fried, cover the chicken with chopped parsley, thyme, rosemary, and sage.

Step 8:

Place the skillet in the oven and cook for 10 more minutes to ensure the center is adequately cooked.

Ingredient substitutions

But there is no hard and fast rule you need to stick to, as there are plenty of opportunities to exchange or add additional herbs and spices to get playful with the dish’s flavor.

1. Tofu

Before we get into the various seasoning and herb substitutions, let’s talk about the main ingredient, chicken.

If for any reason you don’t want to make this meal with chicken, you can use one of the most well-known chicken substitution the world, which is tofu.

It’s a brilliant vegetarian alternative that will fry up just as well as chicken does. If you can, get ‘extra firm’ tofu which has a lower water content than regular tofu and has the closest texture to real chicken.

2. Garlic juice

This works as a good alternative to the garlic powder, but instead of adding it to our flour mixture, we will instead rub it over the chicken before we coat it in the dry flour/seasonings.

This provides the additional benefit of giving the chicken a little more moisture which will help it pick up even more flour than normal.

Resulting in an even thicker and crispier crust.

3. Oregano

Any of the four herbs we have mentioned in this recipe can easily be substituted with oregano, it won’t overpower the flavor and is really handy if you find yourself missing a key herb or spice from the ingredient list.

We are both bringing the middle of the chicken back up to temperature while ensuring the outside is refried to be nice and crispy.

Without any refrying involved we run the risk of making the outer crust of the chicken very soggy and unappealing while making the chicken itself dry and tough.

To get around this we will place a paper towel over the chicken before microwaving, this will assist in managing the water content, ensuring it stays as delicious as possible.

The key here is to take the chicken out of the refrigerator 20-30 minutes before cooking, by allowing it to bake from room temperature instead of cold we reduce our cooking time, thus preserving the taste/texture of the chicken.

Heat the oven to 400°F and, depending on the thickness of the chicken it should take 12 to 20 minutes to come up to temperature.

Preheat the air fryer to 375°F and place the fried chicken in the basket, you can also coat the chicken very lightly in oil to help it re-fry.

To ensure that we are getting the longest shelf life possible out of the fried chicken without it becoming tough, dry, and turning the outer layer soggy, we need to store it correctly.

Store in the fridge

Let the fried chicken cool to room temperature, and then place it in an airtight container.

Alternatively, you can also wrap it in aluminum foil or even plastic wrap, the main thing is just to make sure it’s not exposed to air.

Once refrigerated it can be stored for 3-4 days.

Store in the freezer

It is perfectly safe to freeze fried chicken that is already cooked, simply place it in a freezer bag and freeze.

It can be stored for up to 4 months using this method.
