Chicken Salad Chick (otherwise known as Stacy Brown) set out to make the perfect chicken salad but soon realized the task to be an impossible one because each person’s idea of what perfect means is completely different.
They embraced that, deciding they would simply offer every type of chicken salad imaginable; no matter what’s ‘perfect’ for you, you can bet they have it on their menu.
It’s not just about what they have on the menu. Rather, how they present the menu, with the perfect placement of each item, can make you want everything that’s there. If you’re planning to create a menu as perfect, you can use a free menu template from here to copy their style. But can you really copy the taste?
Out of all the different types of chicken salad they make, one of the most popular is known as the ‘Sassy Scotty’ which is made with bacon and shredded cheddar cheese.
Luckily, it’s pretty simple to make, so today we’re sharing this Chicken Salad Chick’s Sassy Scotty copycat recipe so that you can have a go at it yourself!
How to make Chicken Salad Chick’s Sassy Scotty
Table of Contents
This is a pretty easy dish to make that only requires some common ingredients and about 20 minutes of prep time.
It’s a great side dish that can be served either in bread to make a chicken sandwich or alongside other meals such as soups, potatoes, or cold meat dishes.
We’ll be making both the salad and our own dressing here.
This dressing is also really good by itself and we encourage you to try it on other meals too!
Ingredients:
(2 servings)
For the salad:
- 1 rotisserie chicken, shredded and deboned
- 1/2 cup of grated cheddar cheese
- 1/2 cup of sliced celery
- Pepper (to taste)
- Salt (to taste)
- 3 tbsp of sliced green onion
- 5 strips worth of cooked and crumbled bacon
For the dressing:
- 1/2 cup of mayonnaise
- 3 tbsp of bottled ranch salad dressing
- 2 tbsp of sour cream
Instructions:
Once the prep work is done, including the cooking of the bacon this is a very quick dish to prepare and is essentially just about combining everything together.
This is great as it can be prepared in advance and refrigerated for later, removing the need to prepare 2 meals at once if you plan on serving this alongside something else.
There are lots of options available for adding some additional spices or ingredients to give it a bit more kick, so don’t be afraid to throw more stuff in!
Step 1:
Using a large mixing bowl, combine all the chicken, cheese, celery, green onion, and bacon then mix everything together.
Step 2:
Add additional salt and pepper seasoning to taste. Stir these well too.
Step 3:
Using a second mixing bowl, pour in the mayonnaise, ranch salad dressing, and sour cream.
Mix all of these together thoroughly.
Step 4:
Once the dressing is prepared, pour it all into the main salad bowl and, once again, mix everything together.
If you plan on storing some for later it might be a good idea to separate some of the salad before it’s been dressed to help it stay fresher for longer.
Your salad is now ready to serve!
Ingredients substitutions
As this has a fairly toned-down flavor palette, it means we can get very creative when it comes to both substituting ingredients and adding additional flavors to make something truly special.
Here are some ideas to inspire you, but don’t be afraid to go your own way with it either! It’s a very adaptable dish.
1. Turkey
One of the best alternatives to chicken, with slightly higher protein content and its own distinct flavor.
It’s a wonderful way to inject new life into what is a fairly traditional dish.
It’s worth mentioning that as a darker meat turkey has a stronger flavor, so if you intend on keeping this dish light you may wish to either reduce the amount of turkey used or alternatively make it as a 50/50 split with the chicken.
2. Tofu
The absolute best way to turn this into a vegetarian-friendly meal.
Particularly if you get ‘firm tofu’ which has a very similar texture to that of chicken.
It’s pretty flavorless so you can add some more salt, or alternatively just let all the flavor come from that delicious dressing.
3. Potato
I know, we’re making chicken salad, not potato salad.
But hear me out! If you prepare potatoes properly they will be surprisingly similar to chicken.
Not only that, you can even get creative with it and add some nice baked potato wedges which, if cooked so that the outside is nice and crunchy, add a delicious amount of bite to the meal. Somewhat acting like croutons.
4. Nutritional Yeast
One of the best cheese alternatives that can easily allow any dish to retain that lovely cheese texture and flavor while keeping it completely healthy.
While you won’t be able to get this as slices, a nice sprinkle of this over any salad will resemble that of parmesan and add a good amount of that rich, salty flavor to the dish.
It works great in any kind of salad and we highly encourage you to give it a go!
What to serve with Chicken Salad Chick’s Sassy Scotty
Chicken Salad Chick doesn’t serve this salad with anything as all they offer on their menu are various incarnations of chicken salad.
But that doesn’t stop us from serving it with something else, as traditionally there are many dishes that go excellently with it.
Here are a few of our top suggestions:
Soup
Depending on what kind of meal you’re looking for and what kind of day it is, all kinds of soups will pair excellently with chicken salad.
If it’s a colder day and you need something to offset that lively freshness of the salad, a nice microwaved, piping-hot tomato soup will add that thick richness to warm everything up.
Likewise, if it’s a bright summer’s day and you just want to bulk the meal up in a nice and healthy way, go with vegetable soup.
You can never eat enough vegetables and it’s going to retain that light and energy-filled quality of the salad.
Pita Bread
If you’re not interested in eating the salad out of a bowl, stuffing some of it into freshly toasted pita bread is the perfect way to make it nice and easy to eat as everything’s neatly contained in the pita.
And it actually tastes better!
Baguette
A delicious baguette makes an excellent pairing to the salad to make it more filling and enhance the flavor.
You can eat it by itself alongside the salad, or alternatively cut it down the middle and fill it with as much salad as you can until it’s at its exploding point. Absolutely delicious!
How to store Chicken Salad Chick’s Sassy Scotty
Chicken salad is best served cold anyway, so keeping it nice and fresh in the fridge is important.
This is also very helpful if you want to make it in bulk and keep some for later as you can just grab some out anytime you need it with zero preparation time.
A small tip: chicken salad has a tendency to get a little ‘watery’ if you store it with the dressing already mixed in.
This is because some ingredients can separate and are difficult to remix.
Consider only adding the dressing to the salad you plan on eating, and keep any you plan on storing free from the dressing to help it stay fresh in the fridge.
Store in the fridge
Simply transfer all of the remaining salad into a suitable airtight container and refrigerate.
When stored this way (including dressing) it will keep for 3-5 days.
Store in the freezer
Freezing salad is unfortunately not the best idea.
It can work if you really have no other option and is still going to be edible.
Be aware the quality and texture will suffer a lot, particularly with vegetables, as they will turn a bit limp, soggy and bland.
Likewise, the dressing will separate from the water content and turn rubbery.
But if you absolutely must do this, it will last for 4-6 months in the freezer.
