Publix Key Lime Pie Recipe

Ingredients
  
  • 2 cups graham cracker crumbs or crushed graham crackers
  • 1/2 cup granulated sugar
  • 1/2 cup melted butter
  • A pinch of salt
  • 2 cans 14 ounces each sweetened condensed milk
  • 2/3 cup fresh key lime juice from about 35-40 key limes
  • Lime zest optional
  • Heavy cream for whipped topping optional
Instructions
 
  • Preheat your oven to 350°F (177°C).
    In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and salt until well combined.
    The mixture should stick together when pressed between your fingers.
    Transfer the mixture to a 9-inch pie dish and press it firmly and evenly onto the bottom and sides of the dish.
  • Place the pie dish in the preheated oven and bake the crust for 10-12 minutes or until golden brown.
    Remove the pie dish from the oven and let it cool on a wire rack while you prepare the filling.
  • In a large mixing bowl or the bowl of a stand mixer with a whisk attachment, whisk the sweetened condensed milk and key lime juice until smooth and well combined.
    If desired, add grated lime zest to enhance the lime flavor.
  • Pour the filling mixture into the cooled graham cracker crust and spread it evenly.
    Place the pie in the refrigerator to chill and set for at least four hours or overnight for best results
  • Optionally, prepare whipped cream by whipping the heavy cream until stiff peaks form.
    You can sweeten the whipped cream with granulated sugar to taste.
    Slice the chilled pie and serve it topped with whipped cream if desired.
