  • 3 tbsp Olive Oil
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 can Tomatoes 32 oz.
  • 2 cups Vegetable Broth
  • 1 cup Heavy Cream
  • 1 tbsp Sugar
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Basil chopped
Instructions
 
  • Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until soft, about 5 minutes.
  • Add minced garlic to the pot and cook for an additional minute until fragrant.
  • Stir in the canned tomatoes, broth, sugar, salt, and pepper. Bring everything to a boil.
  • Reduce the heat and let the soup simmer for about 30 minutes, allowing the flavors to meld together.
  • Use a blender or immersion blender to puree the soup until smooth. Be careful with hot liquids!
  • Stir in the heavy cream and chopped basil. Heat the mixture gently, but do not let it boil again.
