Ingredients
  
  • 1 pound ground chicken
  • 8 Romaine lettuce leaves or butter lettuce leaves
  • 2 tablespoons olive oil
  • 2 oz dried shiitake mushrooms
  • 2 tablespoons hoisin sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons teriyaki sauce
  • 2 tablespoons peanut sauce
  • 2 cloves garlic minced
  • 2 teaspoons freshly grated ginger
  • 4 green onions thinly sliced, divided
  • 1/4 cup water chestnuts diced
  • Salt and pepper to taste
Instructions
 
  • In a small bowl, mix together hoisin sauce, peanut sauce, soy sauce, and teriyaki sauce.
    Set the sauce mixture aside for later use.
  • Soak the dried shiitake mushrooms in hot water for approximately 20 minutes or until softened.
    Drain the water and thinly slice the mushrooms.
    Set them aside.
  • In a large skillet, heat the olive oil over medium heat.
    Add the minced garlic and grated ginger.
    Cook for about a minute or until fragrant.
  • Add the ground chicken to the skillet, seasoning with salt and pepper.
    Cook the chicken over medium heat, breaking it up into small pieces using a wooden spoon, until it's no longer pink - about 5 to 7 minutes.
  • Stir in the sliced shiitake mushrooms and diced water chestnuts, and cook for 3 to 4 minutes.
  • Pour the prepared sauce mixture over the chicken mixture and stir well to combine.
    Continue cooking for 2 to 3 minutes, or until heated through.
  • To serve, spoon a generous amount of chicken mixture onto each lettuce leaf.
    Garnish with thinly sliced green onions.
