Trader Joe's Ube Mochi Pancakes Recipe

These pancakes have an incredible chew and a deep, rich ube taste that makes them unforgettable!
Trader Joe’s mix is good, but making them from scratch is next-level.
I use real ube extract for a stronger color and deeper sweetness, and coconut milk adds extra richness that complements the chewiness.
The trick to cooking these is using medium-low heat—too hot, and they burn before the center fully cooks.
The contrast of a crispy edge with that soft, chewy center is what makes these so special!
A drizzle of condensed milk or a sprinkle of coconut flakes takes them over the top.

  • 1 package Ube Mochi Pancake Mix
  • 3/4 cup Water
  • 1 Egg or Egg Alternative
  • 2 tbsp Butter or Oil for cooking
  • Syrup optional
Instructions
 
  • Start by combining the package of Ube Mochi Pancake Mix with 3/4 cup of water in a large mixing bowl.
  • Ensure the mixture is blended well.
  • Add one egg or your preferred egg alternative to the mixture.
  • Stir until the batter is smooth and free of lumps.
  • Preheat a non-stick skillet over medium heat and add a bit of butter or oil to the pan to prevent sticking.
  • Pour about 1/4 cup of the batter onto the skillet for each pancake.
  • Cook for about 2-3 minutes on each side, or until edges are set and bubbles form on the surface.
  • Serve warm with syrup or toppings of your choice.
