  • 1 cup Water
  • 1 cup Fermented Chilies
  • 2 tbsp Lemon Juice
  • 1 tbsp Olive Oil
  • 3 Garlic cloves
  • Salt
  • 1 tsp Dried Chili Flakes
  • 1 tbsp Xanthan Gum

  • Gather all the ingredients you'll need for the sauce.
    Begin by preparing the fermented chilies.
    Remove the stems and seeds, then finely chop.
    Mince the garlic as well.
    Measure out the lemon juice, olive oil, and water.
  • Combine the fermented chilies, lemon juice, olive oil, garlic and dried chili flakes in a blender or food processor.
    Blend until the mixture is smooth and well combined.
  • Depending on how spicy your Peri Peri Sauce is, you can add more or less dried chili flakes.
    Begin with a small amount, blending and tasting until you reach your desired heat level.
  • Xanthan gum helps to thicken the sauce and give it a more desirable consistency.
    Slowly sprinkle the xanthan gum into the blended mixture while continuing to blend until you reach your desired consistency.
    Be sure not to add too much, as this can make the sauce too thick and difficult to pour.
  • Add salt to taste, being careful not to over-salt.
    Blend the sauce again to ensure all the ingredients are thoroughly combined.
  • Transfer the Peri Peri Sauce to an airtight container and store it in the refrigerator for up to two weeks.
