Texas Roadhouse Potato Skins Recipe

You’ll need russet potatoes, cheddar cheese, crispy bacon, and some sour cream to create these bites of heaven.
Start by baking the potatoes until they’re tender, then scoop out most of the insides, leaving just enough to hold the filling.
The secret to amazing potato skins is seasoning both sides with your favorite spices before baking.

Ingredients
  
  • 4 medium Russet Potatoes
  • 3 tbsp Olive Oil
  • 1 cup Cheddar Cheese shredded
  • 6 strips Bacon cooked and crumbled
  • 1 cup Sour Cream
  • 1 tbsp Chives chopped
  • 1 tsp Salt
  • 1 tsp Black Pepper
Instructions
 
  • Preheat your oven to 400°F.
  • Pierce the potatoes several times with a fork and place them on a baking sheet.
  • Bake for about 45-50 minutes or until they are tender.
  • Allow the potatoes to cool for about 10 minutes until they are safe to handle.
  • Cut each potato in half lengthwise.
  • Scoop out the inside, leaving about a 1/4 inch of potato on the skin.
  • Brush the potato skins with olive oil on both sides, then season with salt and pepper.
  • Return them to the oven and bake for 10 minutes.
  • Remove from the oven, flip them over, and bake for another 10 minutes until crispy.
  • Fill each half with shredded cheddar cheese and bacon bits.
  • Broil under high heat for 2-3 minutes to melt the cheese.
  • Serve with sour cream and a sprinkle of chives.
