Subway Macadamia Nut Cookies Recipe

These cookies are everything they should be—soft in the middle, crisp on the edges, and packed with buttery macadamia nuts.
Underbaking is the key—taking them out when they look slightly underdone keeps them soft as they cool.
A mix of white and brown sugar gives them just the right amount of chew and caramel sweetness.
I always toast the macadamia nuts before mixing them in makes a huge difference in taste.

Ingredients
  
  • 1 1/2 cups Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 stick Butter softened
  • 1/2 cup Light Brown Sugar
  • 1/2 cup Sugar
  • 1 tsp Vanilla Extract
  • 1 Egg
  • 3/4 cup Macadamia Nuts chopped
  • 1 cup White Chocolate Chips
Instructions
 
  • Preheat your oven to 350 degrees Fahrenheit.
  • Line your cookie sheets with parchment paper or a silicone mat.
  • Mix the flour, baking soda, and salt in a bowl.
  • Set this mixture aside.
  • In a separate bowl, cream together the butter, brown sugar, and sugar until light and fluffy.
  • Add the vanilla and the egg, and mix until well combined.
  • Gradually blend in the flour mixture.
  • Stir in the macadamia nuts and white chocolate chips to combine evenly.
  • Scoop dough onto the prepared cookie sheets, spacing them evenly.
  • Bake for 10-12 minutes or until golden brown.
