  • 2 cups cold cooked white rice (jasmine rice recommended)
  • 3 tablespoons vegetable oil or peanut oil
  • ½ cup sliced green onions
  • ¼ cup frozen English peas
  • ½ cup fresh bean sprouts
  • ½ cup salad shrimp peeled and deveined
  • ½ cup finely diced ham
  • 2 eggs lightly beaten
  • ¼ cup soy sauce
  • Optional seasonings: sugar pepper
Instructions
 
  • It's best to use cold, leftover rice for stir-fried rice recipes.
    If you don't have any, cook some jasmine rice ahead of time and let it cool in the refrigerator.
  • Heat the 3 tablespoons of peanut or vegetable oil over medium-high heat in a large wok or skillet.
  • Add the sliced green onions to the hot oil and stir-fry for 30 seconds.
    Add the frozen peas and bean sprouts, and continue stir-frying for another minute.
  • Push the cooked vegetables to one side of the wok, making room for the eggs.
    Pour the beaten eggs into the wok, sprinkle them with a pinch of salt, and scramble them.
    Once they're cooked, cut the eggs into small pieces with the spatula and mix them back with the vegetables.
  • Stir in the shrimp and diced ham, cooking until the shrimp are heated through, and the ham is slightly browned.
  • Add the cold, cooked rice to the wok, breaking up any clumps.
    Stir-fry the rice with the other ingredients, ensuring everything is evenly mixed.
  • Pour in the soy sauce, stirring to coat the rice and other ingredients Step.
    If desired, add a pinch of sugar and pepper to taste.
    Continue stir-frying the Subgum Fried Rice for another minute or so, until everything is hot and the flavors have melded together.
