  • 1 small mixing bowl
Ingredients
  
  • 1 lb boneless chicken cut into strips
  • 2 cups mixed colorful vegetables such as water chestnuts, green pepper, carrots, celery, peas, and button mushrooms
  • 1 white onion thinly sliced
  • 2 cloves garlic minced
  • 2 tablespoons oil vegetable or peanut oil
  • 1 cup chicken broth
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • Pinch of black pepper
  • Store-bought Chow Mein noodles (cooked according to package instructions ) Optional:

  • Preheat a large wok or sauté pan over medium-high heat, then add 2 tablespoons of oil.
    Add the minced garlic cloves and sauté for about 30 seconds, until fragrant.
    Add the chicken strips to the wok and stir-fry until the chicken is fully cooked.
    Remove the chicken from the wok and set aside.
  • Add the sliced white onion and an array of vegetables, including water chestnuts, ribs of celery, bell pepper and button mushrooms, to the wok.
    Fry the vegetables for a few minutes until they reach your desired level of tenderness.
  • In the meantime, combine the cornstarch, chicken broth, soy sauce and oyster sauce in a small mixing bowl.
    Whisk together until it forms a smooth and slightly thickened mixture.
    Once the vegetables are tender, return the chicken to the wok and mix well with the vegetable mixture.
    Pour the cornstarch mixture into the wok, evenly covering the chicken and vegetables.
  • Cook this savory sauce over medium heat, stirring continuously until it thickens and bubbles.
    Add a pinch of black pepper to taste and if desired, serve overcooked Chow Mein noodles.
