Ingredients
  
  • 4 pounds of chicken
  • 2 cups of flour
  • 1/3 cup sugar
  • 1/3 cup kosher salt
  • 1 bay leaf
  • 1 tsp red pepper
  • 1 orange peel
  • 1/4 cup cornmeal
  • 1/4 cup crushed potato chips
  • 2 cups buttermilk
  • 1 quart of canola oil
  • 2 tsp garlic powder
  • 1 tsp cayenne
  • ½ tsp of baking powder
  • 2 tsp of black pepper
  • 2 tsp salt
Instructions
 
  • Pour 5 cups of water into a large pot and boil over high heat. Then add red pepper flakes, orange peel, sugar, salt, and bay leaf. Stir it for a minute, so the sugar and salt dissolve.
    Take the mixture off the heat and let it cool. 
  • Place your chicken in a bowl and cover it with brine. Then discard the brine and set the chicken aside. 
    The chicken should then be removed from the brine and dried with a paper towel. Chicken should be taken out of the brine and set aside.
  • Stir the cornmeal, garlic powder, salt, crushed potato chips, baking powder, black pepper, cayenne, and salt. Transfer to a shallow dish and add buttermilk to another shallow dish next to the flour mixture.
    Place a wire rack or pan in front of two dishes where you'll place the battered chicken.
  • One wing should be placed in buttermilk and let soak. Removing any excess, pour it back into the dish. Thoroughly coat the chicken wings with the flour mixture.
    Repeat the procedure with the remaining chicken, then place them on the wire rack or pan to dry for 20 - 30 minutes.
  • Heat the canola oil to 350°F in a large Dutch oven. Place the wire rack over a plate or a lined pan with brown paper.
  • Add a chicken wing to the hot oil in batches, not to crown them since they can become greasy. There will be a reduction in temperature after the chicken is added. So monitor the heat to maintain it at 350°F.
  • Fry each chicken piece for about 8-10 minutes until golden brown. Then remove each with tongs and place them on a rack to drain. 
    Serve generously sprinkled with salt and any of your favorite dips.
