Ingredients
  
  • 2 red bell peppers
  • 1 tbsp olive oil
  • 1 cup of sour cream or Mexican crema
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

  • Preheat your oven to 450°F (230°C) and line a baking sheet with foil.
    Wash and dry the red bell peppers.
  • Cut the peppers in half, remove the seeds and place them skin-side up on your prepared baking sheet.
    Drizzle the olive oil over the peppers and rub it evenly onto the skin.
    Place the sheet in the preheated oven and roast the peppers for 20-25 minutes or until the skin is blistered and charred.
  • Remove the baking sheet from the oven, and let the peppers cool for a few minutes.
    Once they are cool enough to handle, gently peel off and discard the skin.
    You can also gently steam them beforehand using a sealed plastic bag to make peeling easier.
  • In a food processor, combine the roasted red peppers, sour cream, smoked paprika, salt, and pepper.
    Blend the mixture until smooth and creamy.
    If needed, add a little vegetable stock to reach your desired consistency.
  • Give the Smoky Red Pepper Crema a taste and adjust the seasoning if necessary.
    You can add a dash more smoked paprika for a smokier flavor, or additional salt and pepper to suit your preference.
    Your homemade Smoky Red Pepper Crema is now ready for use.
