While it’s heating up, wash and halve your Brussels sprouts.
Pat them dry with a paper towel to remove excess moisture.
Toss the Brussels sprouts with olive oil in a bowl.
Make sure each piece is well-coated.
Place them on a baking sheet in a single layer.
Roast them for 35-40 minutes, shaking the pan halfway through.
While the Brussels sprouts are roasting, prepare the sauce.
In a medium saucepan, combine soy sauce, honey, brown sugar, and fresh ginger.
Simmer the mixture over medium heat until it reduces by half, about 10-15 minutes.
If you like a bit of heat, add red pepper flakes to the sauce.
This step is optional, but it adds a nice kick.
Remove the Brussels sprouts from the oven once they are crispy and tender.
Drizzle the sauce over the Brussels sprouts, tossing them to ensure they are evenly coated.
