Ingredients
  
  • 1 pouch 17.5 oz sugar cookie mix
  • Butter and egg called for on the cookie mix pouch
  • 4 oz cream cheese very softened
  • 1/2 cup canned pumpkin not pumpkin pie mix
  • 1/4 cup sugar
  • 3/4 teaspoon pumpkin pie spice
  • 1/2 cup cream cheese frosting
Instructions
 
  • Preheat your oven to 350°F.
    Generously spray the bottoms and sides of 24 regular-size muffin cups with cooking spray.
    Prepare the cookie base by following the instructions on the sugar cookie mix pouch.
    Combine the sugar cookie mix, butter, and egg in a bowl, mix well, and set aside.
  • Make the pumpkin filling by combining the softened cream cheese, canned pumpkin, sugar, and pumpkin pie spice in a separate bowl.
    Mix until smooth and well combined.
    Assemble the cookies by placing a spoonful of the cookie base mixture into each muffin cup.
    Press the mixture down into the bottom and slightly up the sides, creating a small indentation for the pumpkin filling.
  • Add the pumpkin filling into the indentation of each cookie base.
    You can use a spoon or a piping bag to do this.
    Fill each cookie about halfway with pumpkin filling.
    Bake the cookies in the preheated oven for 15-20 minutes or until the edges of the cookies are golden brown.
  • Cool the cookies for about 5 minutes in the muffin tin, then transfer them to a wire rack to cool completely.
    Top the cookies with cream cheese frosting.
    You can either spread a layer of frosting on top of each cookie or use a piping bag to create a decorative swirl.
