Equipment
  • 1 Slow cooker or Dutch oven
Ingredients

  • 3-4 pounds Chuck roast
  • 1 stick salted butter
  • 1 package Ranch Dressing mix
  • 1 package Au Jus mix
  • 6-8 Pepperoncini peppers
  • 1/2 cup Pepperoncini juice
  • Salt and black pepper to taste
  • Beef broth or cooking liquid optional
Instructions

  • Season your chuck roast liberally with salt and black pepper.
You can first sear the roast over medium-high heat in the Dutch oven or a pan to enhance the flavor.
However, this is an optional step.
  • Place the seasoned chuck roast inside an 8-quart slow cooker.
  • Top the roast with the stick of butter, then sprinkle over the ranch dressing mix and au jus mix evenly.
Arrange the pepperoncini peppers around the roast and pour in the pepperoncini juice.
Add beef broth or other liquid if you want extra cooking liquid for a saucier result.
  • For a slow-cooked, tender roast, cover the slow cooker and cook on low for 8 hours.
If you're working with less time, you can opt for high heat and cook for around 3-4 hours instead.
The key is to allow the flavors to meld together and tenderize the meat.
  • Once the Mississippi Pot Roast has reached its desired tenderness, use two forks to shred the meat into the cooking liquid and give it a gentle stir.
Pair the roast with your choice of sides and enjoy this comforting and satisfying dish!
