  • 6 cups fresh blackberries
  • 1 cup firmly packed light brown sugar
  • 1/4 cup fresh orange juice
  • 1 tablespoon vanilla extract
  • 1/4 cup cornstarch
  • 3 tablespoons water
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter cubed
Instructions
 
  • Preheat the oven to 350°F and grease a 9-inch square baking pan or casserole dish.
    Mix the fresh fruits by combining the blackberries, light brown sugar, orange juice, and vanilla extract in a large bowl.
  • Prepare the thickener by dissolving the cornstarch in 3 tablespoons of water and stirring it into the blackberry mixture.
    Pour the fruit mixture into the prepared baking dish and set it aside.
  • In a separate medium bowl, mix the dry ingredients by whisking together the 1 1/2 cups all-purpose flour, 1/4 cup granulated sugar,1 1/2 teaspoons of baking powder, and 1/2 teaspoon salt.
    Cut the cold butter into the flour mixture using a pastry cutter or two knives until the butter is evenly distributed and the mixture has a crumbly texture.
  • Top the fruit mixture with the butter-flour mixture.
    Bake for approximately 30 minutes in your preheated oven until the topping is golden brown and the fruit is bubbly.
    After the baking time, let the cobbler cool for 30 minutes before serving.
  • Serve your blackberry cobbler warm, topped with a scoop of creamy vanilla ice cream or a dollop of heavy whipping cream or coconut cream.
