Ingredients
  
  • 4 Chicken Breasts
  • 1/2 cup Honey Mustard
  • 1/4 cup Dijon Mustard
  • 1 tbsp Vegetable Oil
  • 8 slices Bacon
  • 1 cup Mushrooms sliced
  • 1 cup Monterey Jack Cheese shredded
  • 1 cup Cheddar Cheese shredded
  • 1 tbsp Parsley chopped
  • Salt and Pepper to taste
Instructions
 
  • Marinate the chicken by mixing honey mustard, dijon mustard, vegetable oil, salt, and pepper.
  • Let it sit in the fridge for at least 2 hours.
  • Preheat your oven to 350°F.
  • In a skillet, cook bacon until crispy, then remove and set aside.
  • In the same skillet, sauté sliced mushrooms in bacon drippings until tender.
  • Set them aside with bacon.
  • In an oven-safe pan, sear the marinated chicken breasts on each side until golden brown.
  • Arrange cooked bacon, mushrooms, and cheese on top.
  • Bake the assembled chicken in the oven until the cheese is melted and bubbly, about 15-20 minutes.
  • Sprinkle with parsley before serving.
