  • 1 pound lean ground beef
  • 1 yellow onion diced
  • 1 6-ounce can tomato paste
  • 1 cup ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon chili powder
  • 2 tablespoons tomato paste
  • 2 cups water
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 teaspoon onion powder
  • 1 teaspoon apple cider vinegar
Instructions
 
  • Place a large Dutch oven or saucepot over medium heat and add the ground beef.
    Cook ground beef for about 5 minutes, until it's mostly cooked through, using a potato masher to break it into small crumbles.
  • Add the diced yellow onion and cook for another 3-4 minutes, stirring occasionally, until the onions become soft and translucent.
    Stir in 1 can of tomato paste, 1 cup ketchup, and 1 tablespoon yellow mustard.
    Mix everything well to fully incorporate the ingredients.
  • Add 1 tablespoon chili powder, 1 teaspoon garlic powder, 1 teaspoon paprika, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon sugar, and 1 teaspoon onion powder to the pot.
    Pour in 2 cups of water and 2 tablespoons of tomato paste, stirring to make sure everything is evenly distributed.
  • Lower the heat and allow the hot dog chili sauce to simmer for about 25-30 minutes, occasionally stirring to prevent sticking.
    The sauce should thicken as it cooks, but if it becomes too thick, add a little more water and adjust the seasonings accordingly.
    Finish the hot dog chili by adding 1 teaspoon of apple cider vinegar, and adjust the seasonings as needed.
  • Now, your North Carolina hot dog chili is ready to be served over hot dogs or used as a topping for other dishes.
