Preheat your oven to 425°F.
Line a baking sheet with parchment paper.
Mix together 2 cups of flour, 1 tablespoon of baking powder, and 1 teaspoon of salt in a bowl.
Cut in 1/4 cup of cold butter until the mix resembles coarse crumbs.
Pour in 3/4 cup of buttermilk gradually, stirring just until a dough forms.
Roll out the dough on a floured surface and fold it over a few times for flakiness.
Cut with a biscuit cutter and place on the prepared baking sheet.
Bake for 10-12 minutes.
In a skillet, cook 1 pound of pork sausage over medium heat until browned.
Drain and remove sausage, leaving drippings in the skillet.
To the drippings, add 3 tablespoons of butter.
Stir in 1/4 cup of flour until bubbly.
Gradually whisk in 2 cups of milk.
Cook for a few minutes until thickened.
Stir in the cooked sausage, salt, and pepper.
Serve the gravy hot over the freshly baked biscuits.
