Ingredients
  
  • 1 cup Unsalted butter softened
  • 1 ½ cups Granulated sugar
  • 2 Large eggs
  • 2 tablespoons fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 3 cups all-purpose flour
  • Salt
  • 1 teaspoon Vanilla extract
Instructions
 
  • Preheat your oven to 325°F.
    In a bowl, mix the butter with the sugar until it becomes fluffy.
    Add the salt, vanilla extract and egg yolks to the mixture and beat again
  • Add the flour to the mix and beat until everything is well mixed.
    Add the fresh lemon zest and juice to the mixture and beat again.
  • Make it into a ball and wrap it in plastic wrap.
    Refrigerate for at least 30 minutes.
  • Take the dough out of the refrigerator and roll it out to about 1/4 inch thickness.
    Use a cookie cutter to cut out different shapesand place the cookies on a prepared cookie sheet.
  • Bake the cookies for 5 minutes at 325°F, then raise the oven temperature to 350°F for an additional 8-11 minutes.
    Once done, take the cookies out of the oven and let them cool on a wire rack.
