The crust is all about mixing freshly grated Parmesan into the breadcrumbs—pre-grated won’t melt the same way.
A quick broil at the end gives the cheese a little extra crispiness, making it even better.

Ingredients
  
  • 2 large Chicken Breasts boneless, skinless
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 0.5 tsp Garlic Powder
  • 0.5 tsp Paprika
  • 1 cup Parmesan Cheese grated
  • 1 cup Breadcrumbs
  • 2 Eggs
  • 1 tbsp Olive Oil

  • Place the chicken breasts between two sheets of plastic wrap.
  • Use a meat mallet to pound them to a 0.5-inch thickness.
  • Season the chicken with salt, black pepper, garlic powder, and paprika.
  • Beat the eggs in a shallow bowl.
  • In another bowl, combine the Parmesan cheese and breadcrumbs.
  • Dip each piece of chicken into the egg mixture.
  • Then, coat it thoroughly with the Parmesan-breadcrumb mixture.
  • Heat olive oil in a skillet over medium heat.
  • Cook the chicken for about 4-5 minutes on each side until golden and crispy.
  • Serve with your choice of side dishes.
