Ingredients
  
  • 2 sticks salted butter
  • 2 sticks unsalted butter
  • ½ squeezed lemon
  • 4 cups chicken broth
  • 2 minced garlic cloves
  • 1 white onion
  • 1 tbsp salt
  • 2 tbsp brown sugar
  • 1 tbsp lemon pepper
  • 1 tbsp red pepper flakes
  • 1 tbsp cayenne pepper
  • 1 tbsp six-pepper blend
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • 3 tbsp onion powder
  • 2 tbsp garlic powder
  • 1 tbsp Creole or Cajun seasoning
  • ½ tbsp Old Bay mix
  • 1 tbsp oregano or marjoram (dried)
Instructions
 
  • Put onions, garlic, and butter into a food processor and work them together on low power and slow speed until smooth.
  • Heat them in a saucepan over medium heat. Then, add the seasonings and the spices to the mix. Note: be careful with the Old Bay. If you add too much, it can make the dish too saucy and acidic. Turn down the heat to simmer the sauce. Stir in frequently, until the mixture begins to thicken and gets somewhat darker.
  • Add the chicken broth and keep simmering on low heat. The broth will deepen the flavors and thin the butter, to prevent the dish from getting watery. This helps bringing together the spices and flavors of the sauce. At this point, you can consider adding 1-2 tablespoons of Tabasco, but you’re perfectly fine without it. Continue cooking for another 20-25 minutes until finished.
  • Once cooked, drizzle it over your seafood, or even cook your meat or fish in it for an ultimate experience. It goes best with grilled seafood.
