Equipment
  • 1 wire rack
  • 1 Medium bowl
Ingredients

  • 1/2 cup unsalted butter softened
  • 2 1/2 cups all-purpose flour
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • Chocolate chunks your choice of brand
  • 1 tbsp light corn syrup optional
Instructions

  • Preheat the oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper or a silicone liner.
In a medium bowl, combine the dry ingredients: all-purpose flour and baking soda.
    Set aside.
  • Cream the butter and sugars together using an electric mixer until light and fluffy.
This should take about 2 to 3 minutes.
Add in the vanilla extract and mix until well incorporated.
If desired, add 1 tbsp of light corn syrup for a chewier texture.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chunks to evenly distribute them throughout the cookie dough.
  • Scoop cookie dough balls of about 2 tablespoons each onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10 to 12 minutes or until the edges are lightly golden.
  • Cool the cookies on the baking sheet for around 5 minutes, then transfer to a wire rack to cool completely.
Following this step-by-step process, you'll have a batch of delicious Insomnia Cookies to enjoy.
Remember, you can always experiment with different chocolate chunks or even add in your favorite mix-ins to make your very own unique Insomnia Cookie copycat recipe.
