  • 1 cup All-Purpose Flour
  • 1 cup Buttermilk
  • 1 Egg
  • 2 tbsp Vegetable Oil
  • 2 tbsp Granulated Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Cheesecake Pieces
  • Cooking Spray
Instructions
 
  • Preheat your oven to 200°F to keep the pancakes warm as you cook them in batches.
  • In a blender, combine the flour, buttermilk, egg, vegetable oil, sugar, baking powder, baking soda, and salt until smooth.
  • Gently fold the cheesecake pieces into the pancake batter, being careful not to break them apart.
  • Heat a non-stick skillet or griddle over medium heat and coat with cooking spray.
  • Pour about 1/3 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden brown.
