Ingredients
  
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup of sugar
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 dash salt
  • 1 16-ounce can fruit cocktail
  • 1/2 cup brown sugar
  • 1/2 cup pecans
  • 1 tsp cinnamon
  • 2 tbsp butter
  • Grease for the pan
Instructions
 
  • Preheat an oven to 375°F and grease an 8x8-inch baking dish or cake pan. 
  • Mix the vanilla extract, egg, and sugar in a mixing bowl until the egg is frothy and bubbly. Then add the flour, salt, baking soda, and the canned fruit cocktail. Combine the mixture.
    Note: don't rinse the syrup from the del monte fruit cocktail. Add all the syrup from the can into the cake batter. It makes the cake pleasantly moist. 
  • Pour the cake mix into the baking dish and sprinkle brown sugar, chopped pecans, and cinnamon
  • Bake the Del Monte Fruit Cocktail Cake for about 30 minutes. Test it with a wooden stick or a toothpick to check if it's finished.
    Remove your cake from the oven and place it in an airtight cooking rack. Serve it with some unsweetened whipping cream, ice cream, or syrup.
