Chicken Cobbler Recipe

Chicken cobbler is a delightful comfort food that brings the classic flavors of chicken pot pie to your dinner table but with a twist.
It's an easy dish to prepare, featuring tender chicken and savory vegetables, all topped with a mouthwatering biscuit layer.

  • 1 baking dish
Ingredients
  
  • 3 cups of cooked and shredded Rotisserie chicken or any leftover chicken
  • 1 can 10.75 oz of cream of chicken soup
  • 1 1/2 cups chicken broth
  • 1/2 stick of butter
  • 2 cups biscuit mix such as Cheddar Bay Biscuit Mix
  • 1 1/2 cups shredded sharp cheddar cheese
  • vegetables of your choice Optional
Instructions
 
  • Preheat your oven to 350°F.
    Place the 1/2 stick of butter into a 9x13-inch baking dish and put it in the oven to melt while the oven heats up.
    Once the butter has melted, remove the baking dish from the oven.
    Add the shredded chicken evenly over the melted butter.
    If you would like to include vegetables in your Chicken Cobbler, add them on top of the chicken layer.
  • In a medium-sized mixing bowl, combine the cream of chicken soup and chicken broth.
    Stir them well to make a smooth soup mixture.
    Pour the soup mixture over the chicken (and vegetables) layer in the baking dish, making sure to spread it out evenly.
  • In a separate bowl, mix the 2 cups of biscuit mix with 1 cup of shredded sharp cheddar cheese.
    Add enough water until it reaches a thick, dough-like consistency.
    Using a spoon or your hands, drop spoonfuls of the biscuit mix on top of the soup mixture layer in the baking dish.
    Don't worry if it doesn't cover everything perfectly, as it will expand while baking.
  • Put the baking dish in your preheated oven and bake for about 30 to 35 minutes, or until the biscuit topping is golden brown and cooked through.
    Upon removing the Chicken Cobbler from the oven, immediately sprinkle the remaining 1/2 cup of shredded sharp cheddar cheese over the top of the golden brown biscuit topping.
    Allow it to melt from the residual heat.
    Once the cheese has melted, serve the Chicken Cobbler while it's hot, and enjoy your delicious and comforting homemade Chicken Cobbler!
