The trick to getting that loveable taste is using chicken sausage instead of pork.
I always cook the hash browns until they’re extra crispy so they don’t get lost in the mix.
A good burrito holds together without falling apart, so don’t overfill—leave a little room to fold it tightly.

  • 8 oz. Chicken Tenders Grilled, Chopped
  • 2 tsp Olive Oil
  • 4 oz. Red Onion Chopped
  • 3 Eggs Beaten
  • Salt and Black Pepper To Taste
  • ½ cup Cherry Tomatoes Quartered
  • ½ cup Monterey Jack Cheese Shredded
  • ½ cup Cheddar Cheese Shredded
  • 2 large Tortillas (Corn or Flour
Instructions
 
  • Preheat a skillet over medium heat and add olive oil.
  • Once hot, add chopped onions and sauté until they become translucent.
  • Add the chopped grilled chicken to the skillet.
  • Cook for about 3-5 minutes until heated through.
  • In a bowl, mix your beaten eggs with a pinch of salt and black pepper, then pour into the skillet.
  • Stir gently until the eggs are fully cooked.
  • Lay the tortillas flat and evenly distribute the egg and chicken mixture across each.
  • Add cherry tomatoes and both types of cheese on top.
  • Roll each tortilla tightly, pressing gently to hold the filling.
  • Serve with a side of salsa, sour cream, or guacamole for added flavor.
