- 4 large-size potatoes
- 2 tbsp olive oil
- ⅓ cup grated Parmesan cheese
- 1 cup Buffalo-style hot pepper sauce
- ¼ cup ranch salad dressing
- 1 tbsp smoked paprika
- ¼ cup melted butter
- 1 tbsp onion powder
- 1 tbsp garlic powder
- salt and pepper to taste
- 2 tbsp freshly chopped parsley
- cooking spray for greasing
Preheat the oven to 400°F and line a baking sheet in the baking pan. Then spray it using a cooking spray.
Wash the potatoes thoroughly to get rid of any dirt, as you won’t be peeling them. Then cut each potato lengthways, and then repeat with each half until you have 8 wedges from each potato. Note: make sure they are about the same thickness and size, so they cook evenly. Add your diced potatoes to a plastic bag with all the seasonings. Seal the bag and give it a good shake so all the wedges are nicely coated in the spices.
Spread your potato wedges on the greased baking sheet in a single layer, skin-side down. Sprinkle with half of the Parmesan cheese and extra salt. Then bake them until browned and crispy for about 35 minutes. Pro tip: Turn the potato wedges halfway through so they are cooked through. Melt the butter and mix it with the hot pepper sauce in a bowl. Dip the cooked potato wedges and serve. Additionally, spread some salad dressing and sprinkle the remaining Parmesan over them.
