Ingredients
  
  • 2 cups whole dill pickles
  • ½ cup all-purpose flour
  • 4 oz all-purpose flour
  • ¼ cup cold soda water
  • ½ tsp Italian seasoning
  • 2 tsp Cajun seasoning
  • ½ tsp cayenne pepper
  • Salt to taste
  • Vegetable oil

  • Place a large frying pan on the stove and pour vegetable oil until it reaches approximately 1 inch height. The ideal temperature for perfect golden brown fried pickles is 375 °F.
  • Sift the corn flour and all-purpose flour into a large bowl. Mix them vigorously while you sift. This will help getting a smooth batter. Add some salt, Cajun seasoning, Italian seasoning, and cayenne pepper. Mix all the ingredients.
  • Slowly stir the soda water into the bowl until you get a smooth and evenly combined texture. Set your spicy batter aside in a chilled area.
  • Prepare the pickles. Slice and pat them dry with a paper towel. Then, toss the pickles in the 4 oz all-purpose flour and dredge until they arewell-coated, so that the batter will stick better.
  • Dip your pickles in the batter until they are fully coated. With a set of tongs, place them into the frying pan. Fry for about 1-2 minutes until they get golden brown. Pro tip: make sure the oil is hot enough before frying to avoid getting limp and greasy pickles.
