Ingredients
  
  • 6 Egg Roll Wrappers
  • 2 Avocados ripe and diced
  • 1/4 cup Sun-Dried Tomatoes chopped
  • 1/4 cup Red Onions chopped
  • 2 tbsp Fresh Cilantro chopped
  • 2 tbsp Pine Nuts
  • 1 tsp Chipotle Peppers minced
  • 1/4 cup Cream Cheese
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
Instructions
 
  • Prepare the filling by mixing diced avocados, sun-dried tomatoes, red onions, cilantro, pine nuts, chipotle peppers, cream cheese, salt, and pepper in a bowl.
  • Lay an egg roll wrapper on a flat surface with a corner pointing toward you, forming a diamond shape.
  • Place a spoonful of the avocado mixture in the center of the wrapper and fold the corner nearest to you over the filling.
  • Tuck the sides over the filling and continue rolling until the wrapper is closed. Use water to seal the edges.
  • Preheat oil in a frying pan and fry the rolls until golden brown and crispy on each side.
