Ingredients
  
  • 3 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups sugar
  • 1 cup chopped walnuts
  • 3 large eggs
  • 3 cups peeled and diced apples tart cooking apples are preferred
  • 1 cup raisins
  • 1 teaspoon vanilla extract
  • 1 cup cooking oil
  • 2 teaspoons baking powder
Instructions
 
  • Whisk together the all-purpose flour, ground cinnamon, nutmeg, salt and baking soda in a large mixing bowl.
  • Whisk the eggs, sugar and vanilla extract in another mixing bowl.
    Gradually add the cooking oil, stirring continuously to create a smooth mixture without lumps.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    Be careful not to overmix.
  • Fold the diced apples, chopped walnuts and raisins into the cake batter, distributing them evenly throughout.
  • Preheat the oven to 350°F (175°C).
    Lightly grease a 9×13-inch baking pan with cooking spray or butter.
  • Pour the cake batter into the prepared baking pan and smooth the batter evenly in the pan.
    Bake for 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool in the pan for about 15 minutes.
    Then, transfer it to a wire rack to cool completely.
    You can also sprinkle powdered sugar on top if you'd like.
