Ingredients
  
  • 12 dry lasagna noodles
  • 1 pound Italian sausage or ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 28-ounce can of crushed tomatoes
  • 2 6-ounce cans of tomato paste
  • 1 15-ounce can of tomato sauce
  • 2 cups water
  • 2 tablespoons sugar
  • 1 1/2 teaspoons dried basil
  • 1 1/2 teaspoons fennel seeds
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 4 cups shredded mozzarella cheese
  • 1 1/2 cups cottage cheese or ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
Instructions
 
  • Preheat your oven to 375°F.
    Cook the lasagna noodles according to package instructions until al dente.
    Drain and set the noodles aside in a single layer of wax paper.
  • In a large pot or Dutch oven, cook the sausage or ground beef, onion and garlic over medium heat until well browned.
    Drain any excess fat.
    Add the crushed tomatoes, tomato paste, tomato sauce and water.
    Stir in sugar, basil, fennel seeds, Italian seasoning, salt, pepper and 2 tablespoons parsley.
    Simmer the sauce, covered, for about 1 1/2 hours, stirring occasionally.
  • In a large bowl, combine the cottage cheese or ricotta cheese, 2 cups of shredded mozzarella cheese and 1/4 cup grated parmesan cheese.
    Mix well.
  • Lightly grease a 9x13-inch baking dish. Place 4 lasagna noodles in the dish, overlapping slightly if necessary.
    Spread 1/3 of the meat sauce over the noodles, followed by 1/2 of the cheese mixture.
    Repeat these layers with 4 more noodles, sauce and the remaining cheese mixture.
    Finish with a layer of noodles and the remaining meat sauce.
  • Cover the lasagna with aluminum foil and bake in the oven for 25 minutes.
    Remove the foil and sprinkle the remaining 2 cups of mozzarella cheese.
    Bake for an additional 25 minutes or until cheese is bubbly and golden.
  • Remove the lasagna from the oven and let it rest for 15 minutes before cutting and serving.
