Ingredients
  
  • 1 pound elbow macaroni
  • 5 tablespoons unsalted butter
  • 1/2 cup all-purpose flour
  • 4 cups whole milk
  • 1 cup heavy cream
  • 1/4 teaspoon each of paprika black pepper, cayenne pepper, garlic powder, onion powder, dry mustard, and nutmeg
  • 1 pound mixed cheese like the MAC & CHEESE Five Cheese blend from Cheese Professionals
Instructions
 
  • Boil a pot of water and cook the elbow macaroni according to package instructions.
    Drain and set aside.
  • In a large saucepan, melt the unsalted butter over medium heat.
    Slowly whisk in the all-purpose flour until a smooth paste is formed.
  • Incorporate the paprika, black pepper, cayenne pepper, garlic powder, onion powder, dry mustard, and nutmeg into the roux.
  • Pour the whole milk and heavy cream into the saucepan, whisking constantly to combine well with the roux mixture.
    Maintain a gentle simmer and let the mixture thicken, stirring frequently to prevent lumps.
  • Add the MAC & CHEESE Five Cheese blend from Cheese Professionals (or your chosen mixed cheeses) to the saucepan.
    Stir continuously until the cheese has completely melted and has a smooth consistency.
  • Gently fold the cooked elbow macaroni into the cheese sauce until evenly coated.
