  • 1 bunch Kale chopped
  • 1 head Romaine Lettuce chopped
  • 1 cup Brussels Sprouts roasted
  • 1/2 cup Pistachios shelled
  • 1/2 cup Raisins
  • 1 cup Cherry Tomatoes halved
  • 1/2 cup Parmesan Cheese shaved
  • 1/2 cup Croutons
  • 1/2 cup Caesar Dressing
Instructions
 
  • Prepare the kale by washing it thoroughly and removing the thick stems. Chop it into bite-sized pieces and place it in a large bowl.
  • Add the chopped romaine lettuce to the bowl. Mix the kale and romaine to combine their textures.
  • In a separate pan, roast Brussels sprouts until they are tender and slightly caramelized.
  • Add these, along with the chopped cherry tomatoes, to the salad.
  • Sprinkle in the pistachios and raisins. These add a nice crunch and sweetness.
  • Toss the salad with the shaved Parmesan, croutons, and Caesar dressing until everything is well coated.
