Ingredients
  
  • 4 ripe tomatoes diced
  • 1 white onion finely chopped
  • 1 jalapeño pepper seeded and minced
  • 1/4 cup fresh cilantro chopped
  • 3 cloves of garlic minced
  • 1 tablespoon lime juice preferably fresh lime juice
  • 1/2 teaspoon salt kosher salt works well
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne powder optional
  • 1 chipotle pepper minced optional
  • 2 green onions thinly sliced (optional)
  • 2 tablespoons vegetable oil
Instructions
 
  • Dice the ripe tomatoes, chop the white onion, mince the jalapeño pepper, and chop a bunch of cilantro.
    Thinly slice the green onions if you decide to use them.
    Mince the chipotle pepper if you want a smoky flavor.
  • Heat the vegetable oil in a skillet over medium heat.
    Add the chopped onion, minced garlic, jalapeño pepper, and the optional sliced green onions.
    Sauté the vegetables until they're soft.
    If you choose to use a chipotle pepper, add it now.
  • Add the diced tomatoes to the skillet and cook for about 5 minutes, stirring occasionally.
    The tomatoes and other vegetables should blend well as they cook.
  • Add the salt, black pepper, and—if desired—the chili and cayenne powders to the skillet.
    Adjust the spices to your taste.
  • Remove the skillet from the heat, then pour in the lime juice and add the chopped fresh cilantro.
    Stir the mixture well to ensure everything is evenly distributed.
  • Taste and adjust any additional salt or spices as needed.
    If you prefer a smoother salsa, place the mixture in a food processor and pulse until you achieve the desired consistency.
