  • 1 cup Raw papaya
  • 1/3 cup Sugar
  • 2/3 cup Water
  • 1/2 tsp Fruit essence or vanilla extract
  • Artificial colors optional

  • Peel the green papaya and remove the seeds.
    Cut the white portion of the papaya into small cubes.
    You can also use watermelon rind as an alternative to green papaya, but ensure to remove the green skin and chop it into small pieces.
  • In a pot, add the papaya pieces and sufficient water to submerge them.
    Cook on medium heat until the papaya pieces are soft but not mushy.
    Once cooked, drain the water and keep the papaya pieces aside.
  • In another pot, mix equal parts of sugar and water (for example, 1 cup sugar and 1 cup water) to prepare the sugar syrup.
    Cook the mixture on medium heat until it reaches one-string consistency.
    Add the cooked papaya pieces to the sugar syrup and let it cook for 2-4 hours on low heat.
    This process helps the papaya to absorb the sugar syrup and become sweet.
  • Remove the papaya pieces from the syrup and let them drain on a wire rack or a plate lined with parchment paper until the excess syrup drips off.
    Add a few drops of fruit essence or vanilla extract to the sugar-soaked papaya pieces and mix well.
    The essence enhances the flavor of Tutti Frutti.
  • Divide the flavored papaya pieces into separate bowls if you wish to use multiple artificial colors.
    Add a few drops of color to each bowl and mix well, ensuring the papaya pieces are evenly coated.
    For a natural yellow color, you can use saffron-infused water instead of artificial colors.
    Place the colored and flavored papaya pieces on a wire rack or a tray covered with parchment paper.
    Leave them to air-dry for at least 24 hours or until they are completely dry and free of moisture.
    Once the Tutti Frutti is dry, store it in an airtight container and use it as a garnish or topping for various desserts, cakes, and ice creams.
    Remember to always use clean, dry utensils when handling the Tutti Frutti to maintain its freshness and prevent spoilage.
