Ingredients
  
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoon baking soda
  • 1 ½ teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups sugar mix of granulated and brown sugar
  • 1 ½ cups melted coconut or other cooking oil
  • 4 eggs
  • 2 cups grated carrots fresh carrots
  • 1 8 ½ oz crushed pineapple, drained
  • ½ cup chopped candied pecans
  • 1 3 ½ oz can flaked coconut
  • 2 teaspoons vanilla extract
  • 1 cup caramel sauce
Instructions
 
  • Preheat your oven to 350 degrees F and grease two 9-inch round cake pans.
    In a mixing bowl, combine the 2 cups all-purpose flour, 2 teaspoons baking powder, 1 ½ teaspoons baking soda, 1 ½ teaspoons salt and 2 teaspoons cinnamon.
  • In a separate bowl, beat together the 2 cups sugar (mix of granulated and brown sugar), 1 ½ cups melted cooking oil, 4 eggs and 2 teaspoons vanilla extract.
    Gradually add the dry ingredients from the mixing bowl into the separate bowl of wet ingredients, stirring to form a smooth cake batter.
  • Stir in the 2 cups grated carrot, ½ cup chopped pecans, crushed pineapple and flaked coconut into the cake batter, mixing until evenly combined.
    Divide the batter between the 2 (9-inch) round cake pans.
  • Bake the cakes in the preheated oven for 35 minutes.
    It's important to keep an eye on the cake during baking to avoid overcooking.
  • Once baked, remove the carrot cakes from the oven and let them cool in the pans for about 10 minutes.
    Then, transfer them onto a wire rack to cool completely before frosting.
