Ingredients
  
  • 400 g cheese tortellini fresh or frozen
  • 6 slices bacon chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 garlic cloves minced
  • 1/4 cup fresh parsley chopped
  • Salt and black pepper to taste
Instructions
 
  • Bring a large pot of water to a boil, add the tortellini and cook according to the package instructions.
    If using frozen tortellini, allow a few extra minutes of cooking time.
    Once cooked, reserve a cup of pasta water and drain the tortellini.
    Set aside.
  • In a large skillet, cook the chopped bacon over medium heat until crispy.
    Use a slotted spoon to remove the bacon bits and drain them on paper towels.
    Keep the bacon fat in the skillet, as it will add flavor to the sauce.
  • Lower the heat to medium-low and add the minced garlic to the bacon fat in the skillet.
    Sauté for about 1 minute or until fragrant.
    Pour in the heavy cream and the Parmesan cheese, stirring frequently until the cheese has melted and the sauce thickens.
  • Gently stir the cooked tortellini into the cream mixture, ensuring each piece is evenly coated with the sauce.
    If the sauce is too thick, add a small amount of the reserved pasta water to reach the desired consistency.
  • Season the tortellini carbonara with salt and black pepper to taste.
    Finally, toss in the crispy bacon bits and fresh parsley, stirring to combine.
