In a medium-sized saucepan, heat the vegetable oil over medium heat. Once the oil is hot, add the diced white onions, minced garlic, and destemmed habaneros. Cook the vegetables, stirring occasionally, until the onions have become slightly translucent, which should take around five minutes.
To the saucepan, add the tomato sauce and chopped green chiles. Stir everything together to ensure the mixture is evenly combined. Let the mixture cook for an additional five minutes.
Add the white wine vinegar, kosher salt, and a pinch of salt to taste. Stir everything together, and let the mixture cook for 10 minutes on low heat. Taste the sauce and add a squeeze of lime juice as needed to balance the flavors.
Remove the saucepan from the heat and allow the sauce to cool for a couple of minutes. Next, use an immersion blender or transfer the sauce to a standing blender and blend until smooth.
