Cook them over medium heat until they are soft and translucent, about 2-3 minutes.
Combine mustard, honey, and champagne vinegar in a small bowl.
Pour this mixture into the skillet with the shallots, stirring well.
Mix the cornstarch and water in another bowl until smooth.
Add this mixture to the skillet, stirring constantly to thicken the dressing.
Crumble the cooked bacon and add it to the skillet.
Stir everything together and season with a pinch of salt to taste.
