Ingredients
  
  • 4 slices Bacon
  • 2 tbsp Dijon Mustard
  • 3 tbsp Honey
  • 1/4 cup Champagne Vinegar
  • 1/2 cup Shallots diced
  • 1/4 cup Water
  • 1 pinch Salt
  • 1 tsp Cornstarch
Instructions
 
  • Cook the bacon in a large skillet over medium heat until it's crispy.
  • Transfer the bacon to a paper towel to let it drain, saving 2 tablespoons of the bacon drippings in the skillet.
  • Add the diced shallots to the skillet with bacon drippings.
  • Cook them over medium heat until they are soft and translucent, about 2-3 minutes.
  • Combine mustard, honey, and champagne vinegar in a small bowl.
  • Pour this mixture into the skillet with the shallots, stirring well.
  • Mix the cornstarch and water in another bowl until smooth.
  • Add this mixture to the skillet, stirring constantly to thicken the dressing.
  • Crumble the cooked bacon and add it to the skillet.
  • Stir everything together and season with a pinch of salt to taste.
