Ingredients
  
  • 2 cups cooked and shredded chicken such as rotisserie chicken or skinless chicken breasts
  • 1 15-ounce can black beans, drained and rinsed
  • 1 1/2 cups shredded cheese preferably a mix of cheddar and Monterey Jack
  • 1 cup frozen corn thawed
  • 1/2 cup diced red bell pepper
  • 1/4 cup finely chopped cilantro
  • 2 tablespoons taco seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1 tablespoon vegetable oil plus more for deep frying
  • 1 package egg roll wrappers
  • Water for sealing egg roll wrappers
Instructions
 
  • If using raw chicken breasts, cook them until fully cooked, then shred the chicken.
    If using rotisserie chicken, shred it into small pieces.
  • In a large bowl, combine shredded chicken, black beans, cheese, corn, red bell pepper, cilantro, taco seasoning, chili powder, and salt.
    Mix well to ensure all ingredients are evenly distributed.
  • In a large skillet over medium heat, heat 1 tablespoon of vegetable oil.
    Add the chicken mixture and cook for 3-5 minutes, stirring occasionally, until heated through and slightly softened.
  • Lay out a clean, dry surface and place one egg roll wrapper on it, with a corner pointing toward you.
    Place about 2 tablespoons of the filling in the center of the wrapper, and fold the corner closest to you over the filling.
    Tuck in the side corners, and then continue rolling the egg roll away from you until just the far corner remains.
    Wet the far corner with water, and then finish rolling the egg roll to seal.
  • In a deep frying pan or electric deep fryer, heat 2 inches of vegetable oil to 350°F (175°C).
    Carefully add the egg rolls to the oil and fry until golden brown, turning occasionally, about 3-5 minutes.
    Remove the egg rolls with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  • Serve your crispy Tex Mex Egg Rolls while they are still warm, accompanied by your favorite dipping sauce.
