  • 1 cup All-purpose flour 
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter
  • 3/4 cup Granulated sugar 
  • 1/4 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • Cinnamon sticks
  • 2 tablespoon Rice flour
  • 1/2 cup Lukewarm milk
  • 1/2 cup Grated coconut
  • Optional: Pink sugar or colorful sprinkles for decoration
Instructions
 
  • Preheat your oven to 375°F (190°C).
    Line a couple of baking sheets with parchment paper to prevent sticking.
  • In a separate bowl, whisk together 1 cup of All-purpose flour1 teaspoon of baking powder1/2 teaspoon of baking soda1/4 teaspoon of salt, and 2 tablespoons of rice flour.
  • In another bowl, cream together 1/2 cup of softened unsalted butter3/4 cup of granulated sugar, and 1 teaspoon of vanilla extract until the mixture is light and fluffy.
  • Gradually add the dry ingredients into the wet ingredients, alternating with 1/2 cup of lukewarm milk, and mix until just combined.
    Stir in 1/2 cup of grated coconut and crushed cinnamon sticks.
  • Drop tablespoonfuls of the dough onto the prepared baking sheets, ensuring enough space for the cookies to expand during baking.
  • Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
    Baking time may vary, so keep an eye on the cookies.
  • Allow the baked cookies to cool on the sheets for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, dust the cookies with powdered sugar, and for a festive touch, add pink sugar or colorful sprinkles.
