  • 1 1/2 pounds of dried black beans
  • 1 small-sized onion finely chopped
  • 1 tablespoon of cumin
  • 1 tablespoon chipotle powder
  • 1 tablespoon agave syrup
  • 1 cup of orange juice
  • 1 cup of broth vegetable or chicken
  • Salt to taste
Instructions
 
  • If you're using canned beans, drain and rinse them before use.
    If you're using dried beans, soak them in water for at least 8 hours or overnight.
    After soaking, drain and rinse the beans.
  • In a large pot, add the soaked or rinsed black beans and cover them with 4 cups of water.
    Add a pinch of salt to the pot.
    Bring the mixture to a boil, then reduce the heat to medium and let the beans cook until they become soft.
    This will usually take about 1-2 hours, depending on the type and age of the beans.
    Check the beans occasionally, and if needed, add more water to the pot during the cooking time.
  • While the beans are cooking, heat up 2 tablespoons of oil in a pan over medium heat.
    Add the chopped onion and cook until it becomes translucent.
    Then, add the cumin and chipotle powder to the pan.
    Stir to combine and cook for a couple of minutes to enhance the flavors.
  • Add the orange juice, agave syrup, and a cup of broth (vegetable or chicken) to the onion-spice mixture.
    Stir and simmer for about 5 minutes to develop the tangy and smoky flavors.
  • Once the beans are cooked and soft, carefully drain any excess water from the pot.
    Add the sauce to the pot with the beans and stir to mix everything well.
    Let the beans and sauce simmer together for 10-15 minutes over medium-low heat, stirring occasionally.
  • Taste the black beans and adjust the seasoning by adding salt or more chipotle powder if needed to suit your preferences.
