Ingredients
  
  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 4 eggs
  • 3 tsp butter (melted)
  • 3 tsp sugar
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp fresh parsley (chopped)
  • 1 tbsp onion (minced)
  • 4 fresh russet potatoes (shredded)
Instructions
 
  • Combine all ingredients, except the potatoes, in a large mixing bowl and whisk the mixture thoroughly. You can use a mixer for a softer and smoother batter. 
  • Add shredded fresh potatoes and combine them with the rest of the mixed ingredients. Set aside and let the mixture sit for 10-15 minutes. 
  • Preheat a large non-stick pan over medium-high heat and pour a little butter into it. 
    Note: add a few drops of the batter into the pan to see if it is heated enough. 
  • Pour ¼ cup of batter into the pan—Cook as many pancakes as can fit into your pan in one round. Cook them for 2 minutes per side until you get crispy hash browns. 
    Continue the process until you finish all the batter. 
  • Pour batter on top of your potato pancakes and serve with honey mustard, syrup, green onions, or any of your favorite condiments.
