  • ½ cup Soy Sauce
  • ½ cup Citrus Juice like lemon or lime juice
  • 2 Tbsp Mirin
  • Zest from 1 Lemon
  • ½ cup Katsuobushi dried bonito flakes
  • 1 piece Kombu dried kelp
Instructions
 
  • Combine soy sauce, citrus juice, mirin, and lemon zest in a sterilized jar.
  • Add katsuobushi and kombu to the mixture.
  • Mix well and let the mixture sit for at least 30 minutes to allow flavors to blend.
  • After 30 minutes, strain out the solids using a fine mesh strainer or cheesecloth.
  • Store the strained sauce in the refrigerator until ready to use.
