Olive Garden Sausage Soup Recipe

Ingredients
  
  • 1 lb Italian Sausage
  • 4 slices Bacon
  • 5 cups Chicken Broth
  • 4 cups Water
  • 5 Potatoes chopped
  • 1 Onion finely diced
  • 2 cloves Garlic minced
  • 1/2 tsp Red Pepper Flakes
  • 2 cups Kale chopped
  • 1 cup Half and Half
  • Salt and Pepper to taste
Instructions
 
  • Cook the bacon in a large pot until crispy.
  • Remove and crumble it into small pieces.
  • In the same pot, add Italian sausage and break it apart while cooking until fully browned.
  • Remove and set aside the sausage on a paper towel-lined plate.
  • Add the diced onion to the same pot and sauté for about 5 minutes until soft and golden.
  • Add minced garlic and cook for another minute.
  • Pour in the chicken broth and water and bring it to a boil.
  • Add the chopped potatoes and reduce the heat to medium-low.
  • Cook until the potatoes are tender, about 12-15 minutes.
  • Add the sausage back into the pot along with red pepper flakes, kale, and half and half.
  • Stir well and cook for an additional 5-10 minutes until the kale is tender.
