Instructions
Preheat your oven to 350°F (175°C).Grease a 9×13-inch baking dish with butter or non-stick spray.
Cook the elbow macaroni in a large pot of boiling salted water until just al dente. Drain well and set aside.
In the same pot, melt 4 tablespoons of butter over medium heat. Whisk in the flour and cook for about one minute, stirring continuously, to create a roux.
Gradually add the whole milk and heavy cream, stirring continuously, until the mixture is smooth and starts to thicken.
Stir in the Velveeta cheese, sharp cheddar cheese, smoked gouda, and pepper jack, mixing until fully melted.
Season the cheese sauce with paprika, cayenne pepper, salt, and pepper. For an extra smoky flavor, you may add BBQ sauce to your cheese mixture.
Add the cooked macaroni to the sauce, stirring until the pasta is evenly coated.
Transfer the macaroni and cheese mixture to the prepared baking dish. Sprinkle additional cheese on top for a richer cheese crust.
Bake in the preheated oven for about 25–30 minutes, or until bubbly and golden brown on top.
