  • 1 baking paper
  • 1 large mixing bowl
  • 1 Separate bowl
  • 1 wire rack
Ingredients
  
  • 225 g plain flour
  • 2 tsp baking powder
  • 150 g caster sugar
  • 100 g cold butter cubed
  • 1 large egg
  • 1-2 tbsp milk
  • 75 g dried mixed fruit
Instructions
 
  • Line a baking tray with baking paper to prepare it for your baked rock cakes later.
  • Set your oven to 200°C (180°C for a fan oven) or Gas Mark 6, allowing it to warm up while you prepare the cake mix.
  • In your large mixing bowl, add the plain flour and baking powder.
    Stir well to mix.
  • Add the cold butter cubes to the flour mixture.
    Rub the butter in using your fingertips until the mix resembles fine breadcrumbs
  • Stir in the caster sugar and dried mixed fruit, evenly distributing them throughout the mixture.
  • In a separate bowl, beat together the egg and milk; make sure the consistency is smooth and even.
  • Pour the egg and milk mixture into the breadcrumb mixture.
    Mix the ingredients with a spatula or spoon until a firm, dough-like texture is formed.
  • Use your hands, a spoon or an ice cream scoop to divide the dough into 10-12 equal portions.
    Place each portion on the tray with baking paper, gently shaping them to resemble rocky, uneven lumps.
    Place the baking tray with your formed rock cakes into the preheated oven.
    Bake for 15-20 minutes or until the rock cakes are golden brown on top.
  • Remove the baked rock cakes from the oven and let them cool on a wire rack.
    Once cooled, enjoy your delicious biscuity creations with a cup of tea or coffee.
