Ingredients
  
  • 4 ripe bananas
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup caster sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon bicarbonate of soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon optional
  • 1 teaspoon vanilla extract
  • 3/4 cup chocolate chips
  • 12 muffin cups or greased muffin tin
Instructions
 
  • Start by preheating your oven to 180°C/350°F/Gas Mark 4.
    Lightly grease a 12-count muffin tin or line it with muffin cups.
    In a mixing bowl, mash the bananas until smooth. 
  • In a separate heatproof bowl, melt the butter and let it cool for a few minutes.
    Add granulated and caster sugar, and mix well using a whisk.
    Beat in the eggs, one at a time, and then add in the mashed bananas and vanilla extract.
    In a large mixing bowl, whisk together the all-purpose flour, baking powder, bicarbonate of soda, salt, and a bit of cinnamon if desired.
  • Gradually add the wet mixture to the dry ingredients, and gently mix them until just combined.
    Do not overmix, as it could result in tough muffins.
    Fold in 3/4 cup of chocolate chips, being careful not to overmix.
  • Using a cookie scoop or spoon, fill the muffin cups or greased muffin tin with the banana muffin batter.
    Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for 5-10 minutes before transferring them to a wire rack to cool completely.
